Veggie Pot, Veggie Pot, Veggie Pot Pie

This is what you need, it's very basic.


1 T butter
6 cups of veggies - your choice. I used frozen.
1/4 c flour
3c warm veggie stock or milk (I used veggie based with 2c milk, 1c water)
1/2 t thyme
1t salt or soy sauce


whatever crust or biscuit recipe you like.

Melt butter, add veggies and saute about 5-10 minutes depending on your veggies. Add and stir in spices. Sprinkle and stir in flour, continue cooking.
Add in warm liquid, stir until sauce begins to thicken.

transfer to baking dish, I then added cheese but you can leave it off

Put crust or biscuit dough on top. I made a very thin mix to pour on mine

Bake at 400 for 20-30 minutes
