Lower Carb Fried Rice

So, not only am I cooking vegetarian I also need to watch carbs for my husband. So I took a favorite recipe of ours and did just that.


Recipe:
2 tbsp oil for sauteing
Half of large onion diced
1 stalk celery chopped
1/2 c peas
1/2 c carrots chopped
1/2 head of cauliflower, stem removed, grated (or use food processor with a few pulses to get texture of rice)
2 cups cooked rice (made a day in advance is best)
2-3 tbsp soy sauce
Salt and pepper to taste
2-3 eggs

Heat oil in large pan and sauté veggies. Add rice, cauliflower and soy sauce and mix till evenly distributed. Push rice to the side of the pan and scramble the eggs. Once eggs are cooked mix in with rice and serve warm.

Makes 4 big servings with only 1/2 c rice per person!
